Broken Wheat (or Cracked Wheat, also called as couscous) is made by milling whole raw wheat grains coarsely. Wheat is cleaned and husked and then processed to the required size. It is highly nutritious as it does not undergo refining. Such broken wheat has a large number of uses, especially as a dietary supplement. When broken wheat is cooked, it has an amazing aroma, and a grainy, delightful taste. It is slightly nutty and chewy.
Broken wheat can be used to prepare:
- Dalia.
- Soups and to stuff vegetables.
- As a staple, serving vegetables alongside it.
- In grain pulaos, multi-grain breads and pancakes.
- Several kheers (payasa) and sweet dishes.
- As a festive delicacy when prepared as a kheer along with coconut milk and jaggery.
- Broken Wheat Upma.
- A soft-cooked bhaath.
Broken Wheat lowers the risk for serious diseases. Adding broken wheat, as well as other whole grains to your diet in place of low-nutrient fare could provide some protection from serious health conditions. Whole grains like broken wheat provide not only fiber, but more B Vitamins, Iron, and Anti-oxidants than refined grains.
